As someone building a coffee company from the ground up, Bellwether has been a game changer for us at Function Coffee Co. I got the shop roaster last Jan.
You can use their beans and profiles or do your own. It just hits every time—super consistent. That’s huge when you’re trying to scale and maintain quality across batches without babysitting a traditional gas roaster. It’s allowed me to focus more on the business, brand, and customer experience instead of being tied to the machine all day. Which is invaluable.
The electric setup is another massive win—especially in a growing area like Northlake where buildout constraints and permitting can get tricky. Not needing gas and venting infrastructure simplified a lot of decisions for us and opens up flexibility for future locations.
I also love how approachable it makes roasting. Whether you’re coming from a barista background or you’re newer to production roasting, the learning curve is way less intimidating—but without sacrificing quality. You can still get really nuanced, high-end results. Customers love it, genuinely.
From a business standpoint, it’s just efficient. Predictable batch sizes, clean operation, and a smaller footprint all make it ideal. Any down time we've had has been remedied very quickly. I was even overnighted a fix once when I needed to update without the internet. I was shocked at how prompt they were. You read a lot of things online from when the company was just starting and they've fixed soooo many things. That what happens when you are an industry disruptor. They are now in full force, and I love it.
I wish I would have started with the full stack instead of just the shop roaster because it’s been growing so much this year!
Overall, Bellwether has been a huge part of helping us bring Function Coffee Co. to life—and I’d absolutely recommend it to anyone looking to build a modern, scalable coffee program.
